Raw beets contain phosphorus, sodium, magnesium, calcium, iron, potassium, plus vitamin A, niacin, folate and biotin which are absorbed more easily in juice than synthetic nutrients. Iron is reputed for being more easily absorbed in juice than other iron supplements.

Potassium, in particular, is essential for all cellular functions. Along with sodium, potassium regulates water balance and acidity-alkalinity balance in the blood and tissues. It is often depleted with aging, in degenerative disorders and with a  highly refined diet that is high in sugar.

Historically, beets have been known to have anti-hepatotoxic properties which means that it's able to counter damaging effects on the liver. For the last three or four centuries, it's been thought to be beneficial for liver detoxification and was used in the treatment of hepatitis.

How beets support the liver is unknown, but a theory suggests that a high concentration of betaine effectively limits fat deposits. Betaine also plays a role in reducing high homocysteine (an amino acid) levels associated with heart disease and stroke.

Results of a 20 year study has identified the protective effects of fruits and vegetables against strokes. The amount of fruits and vegetables eaten was inversely proportional to the stroke risk factor (Gillman, 1995).

Beets also contain biochanin A — a potential cancer fighting agent. Health and nutrition expert Norman W. Walker, Ph.D., suggested that beet juice is helpful for menstrual problems and menopause. In Indian medicine, beet juice is used for coughs and infections.
